Accounts are contained in the accounts.xml file. You are able to use
multiple accounts in finch at the same time. What you likely saw was the
initial "enable some accounts" window since you had none enabled in finch
(enabling an account is a per-ui setting so an account can be enabled in
pidgin but not in finch).

Once accounts are enabled finch just uses those accounts again by default.
You can bring up the Accounts window in finch from the finch windows menu
anytime you want.
