Enable central logging

Just a thought, but a file system that allows write (without read) may work, but this could be problematic, as pidgin may read the file as part of the write operation.

Instead, can you map a "home" or "personal" drive for your users and default their files there allowing them to only write and view their own? 

What you are describing is usually done by a central logging server, and the server handling the communication (Microsoft communicator for example) may be a better place to capture that.
