Protocols can be disabled by removing the plugins from the installation
location. However this is not a very good solution to the problem since
anybody could run a portable version of Pidgin and still have the facility.
If you really don't trust people (and I'd recommend you should trust
people, people are inherently trustworthy) you should block access to the
specific servers at the internet firewall. That way you can be sure the
problem is solved.
The problem with your request and Pidgin is that Gtalk, Jabber/XMPP and
Facebook are all the same protocol. So you cannot really remove Pidgins
Facebook protocol whilst keeping Gtalk because its part of the Jabber
plugin.
Regarding logging on server, you should really consult the documentation
for your chosen server. This isn't the mailing list to ask
very general questions about some other software.
