 Maybe that I'm wrong somewhere, but ...

 ./configure without arguments tries to build the GTK-UI
 ./configure --disable-gtkui disables building of GTK-UI

 So far so good, but according to ./configure --help there isn't any
 command line argument like --enable-consoleui.

 I am planning on building a Finch Debian package, that installs ONLY
 finch.
