 You appear to be asking questions, but offer no question marks to speak
 of. I'll address them as if you had:

 "Why is it that when programmers get ahold of a piece of software they
 fill the need to leave out functionality? "

 Because sometimes that functionality sucked and needed to be replaced with
 something better.

 "The user no longer has the ability to control fonts on transmit or
 receive."

 I believe what you're looking for is Preferences > Conversations > Show
 formatting on incoming messages, but I'm not positive

 "Why did you remove the crtl-enter send capability."

 It's been delegated to GTK+. See
