 I have buddies that use more than one protocol. They also use more than
 one client. For example, gmail (for gtalk) and aim. OR as an alternative,
 when starting a new conversation, in the hierarchy for choosing what
 protocol, pick whatever you were last messaged with.

 If the buddy normally wants to talk to me via aim, there should be a way
 to set that.
 They will IM me via aim, and I would close the window but then want to
 reply fairly soon and it would respond via gtalk. The buddy now has 2
 conversations windows when they should have 1, while I don't even know
 until they yell at me about it.
