 Create a "New Status..." from the status dropdown at the bottom of the
 buddy list. Select a status of Invisible, Title it whatever you prefer,
 and possibly expand "Use a different status for some accounts" and fill
 out these. Click "Save", then open up a prefs window: "Buddy List > Tools
 > Preferences." Select the tab "Status / Idle", and set "Status to apply
 at startup" to whatever invisible status you just created. Alternatively,
 enable "Use status from last exit at startup" to return you to whatever
 status you quit from prior.

 If that doesn't do what you're looking for, starting pidgin with the
 '''-n''' flag will disable automatic login, and set all accounts to
 disconnected. You can then set your status to invisible and hide.
