Comment:

You can manually send an IM to a specific resource by using the New
Instant Message dialog (user at server/resource). Modifying the Send To menu
to support selecting from the available resources is something I have been
wanting for ages but have not had the time to fully investigate (and it is
something that would need to be done carefully as it would be a change in
the somewhat fundamental understanding of how buddies and conversations
work in pidgin). See ticket #2448 (and the ticket that links to) for a
 little more discussion, information, etc.

As to your original issue though, it should not be possible for the
receiver of a message to change in the middle of a conversation as last I
knew pidgin bound the conversation to a resource once it received a
message. I suppose it is possible Google Talk is doing interesting things
with how they decide to route messages but without significantly more
information and repetition I can't say and am hesitant to blame anyone.

I'm closing this as a duplicate, if you have your issue again feel free to
report back here and we can reopen this.
