 for some reason, it takes ±30 seconds (measured with my stopwatch) between
 the time the "status icon" of pidgin tells me I am connected to
 im.ecchi.ca (which is in fact im2.apinc.org), and the time where my
 contacts [start to] appear in my buddy list.

 Connecting to the same server and account with Gajim instead of pidgin is
 instantaneous.
