Comment:

 I'm embarrassed to say -- user error. I had been using Pidgin/Gaim for
 years but I was never using this feature correctly.

 In case someone else stumbles upon this...

 Select your status via the quick status picker at the bottom of the Pidgin
 window. When the text box appears with "typing" above it, enter in your
 status.

 For saved statuses, select saved statuses from the quick picker and
 add/edit entry. Title will not be listed in your message. Only the message
 portion.

 For non-saved, click the quick-pick saved statuses.

 Thanks to everyone who answered. Maybe a FAQ might help since the
 interface is a bit different from Gtalk.
