Comment:

 Presumably this is caused by your GTK+ theme having a text field
 background color that matches the color of the incoming text.

 If you uncheck the "Show formatting on incoming messages" Conversations
 preference checkbox, it'll use the foreground text color from your GTK+
 theme.
