Comment:

 The same way that it was set up to start automatically :)

 Go to the Tools->Plugins menu.

 Select the "Windows Pidgin Options" plugin and click the "Configure
 Plugin" button.

 Then uncheck the "Start Pidgin on Windows startup" checkbox.
