Why cannot send email when adding gtalk plugins

This is completely normal. Google Talk operates using the XMPP 
specification. More or less (they do some of their own funky foo, as 
well). The 'GTalk' shortcut in the add account thing is for people who 
aren't aware of this distinction.
As such, I don't think it's possible to 'extract' the email address from 
the server as it's using underlying XMPP (Jabber ID != email address). 
Would be happy to be proven wrong, though!
Having said that, maybe there's some plugin hacks for GTalk that someone 
could do.
