Comment:

 The "Google Talk" entry in the protocol selection list is just an alias
 for the XMPP protocol to make it easier for people to know they can use
 there gtalk accounts in Pidgin.  The behavior you're describing doesn't
 sound like anything isn't working as intended.

 Have you actually tried to connect?
 What happens when you do?
