 I do not believe this is something we can actually control.  We do not
 directly change the gmail contacts entries, instead we set the 'name'
 roster attribute for the person, which Google, on the server, translates
 into a modification of the Full Name (instead of the Nickname, as you
 want).

 One way you can work around this is to right-click on the person you want
 to alias, select Expand. The Metacontact for that person should now be
 highlighted (Pidgin allows you to group multiple buddies into one "person"
 contact). If you alias just the contact, the change will not be made on
 the server.
