The overall situation is described in the [wiki:PlainTextPasswords FAQ].
One solution would be to not use a password for authentication, e.g.
openfire has instructions for how to configure it so that it can use
external credentials:

I think that similar things can be done for some other XMPP servers.
The clients will also need to be configured accordingly (e.g. for Pidgin
on Windows, you need to install MIT Kerberos for Windows).
